Mardi Gras Fritter

St. Martin, an island of a thousand flavours

beignetsThe Mardi Gras is the last day of carnival, people go wild and eat rich food before spending 40 days of abstinence. In that occasion people make delicious Mardis Gras Fritters or beignets made of fried dough with add a lot of sugar. They are so tasty!!!

Serves 4

Cooking time : 45 mn
Repos : 2 hours

puce-bleue INGREDIENTS

4.41 once of flour
5.29 once of sugar
3.53 once of butter
4 eggs
1 cup of water
Cinnamon, nutmeg, vanilla extract
Lemon peel
Drops of rum
A pinch of salt
4 cups of oil

puce-bleue DIRECTIONS

Put water, salt, sugar and butter in a pan and remove when the butter has melt.
Add the flour and toss untill you get a thick and homogeneous dough.
Put back the dough on fire and stir constantly for the dough not to stick to pan.
Remove from fire.
Whisk the eggs 1 by 1.
Add the rum, the spices and the vanilla.
Mix all.

Heat oil in skillet over medium high heat.
When oil is hot fry about 6 beignets at a time, turning often so they do not burn but turn a golden brown.
Remove from oil and drain beignets on a paper towel.
Place on serving plate and dust with powdered sugar.
